Chickpea and peanutbutter stew

Ingredients

  • 16oz chickpeas
  • 2 garlic gloves
  • 500ml vegetable stock
  • 50g peanut butter
  • 1/2tsp cumin
  • 1/2 coriander
  • 1/2 turmeric powder
  • 100g mushrooms

Method

  • Boil and drain chickpeas.
  • Add cooked mushrooms and herbs.
  • Add stock, garlic and then peanut butter.
  • Bring to the boil and simmer for 10mins.
